WHere is a home-style take on a drink from a new cocktail list. It's a party-sized premix which is loaded full of essence of the holiday season, which makes it excellent for hosting a festive gathering. Reserve the remaining citrus syrup for breakfast cocktails, puddings, or to make another batch of this cocktail.
Bikini Recipe
Yields 10 servings
For the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar
To make the Drink (yields 850ml, serving 10)
400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, to finish
Instructions
Making the Cordial: Place all the items into a pot, bring to a simmer, agitating until the sugar dissolves. Next, take off the heat and leave to cool down entirely. Decant into a clean bottle, close it keeping it in the fridge, it can be stored for about one month.
To make Batch Mix: Pour every liquid ingredients in a sizeable container, allow it to infuse for an hour, then pass it through best through muslin, making it perfectly clear.
To serve: Pour 85ml of the cocktail base into a mixing glass filled with ice, gently stirring lightly for a minute to cool it down. Pour to a frosted cocktail glass or similar, garnish with a few cranberries adding the final touch using a quick spritz with the mandarin essence above the glass.
